温度 50 ℃、提取时间 30 min、液料比 30:1、提取剂中柠檬酸浓度 90 g/L,在此条件下 紫苏叶花青素得率为 5.511 mg/100g。紫苏叶花青素最佳纯化条件为:吸附树脂 AB-8 型、 吸附液料比 80:1、吸附时间 21 h。在此纯化条件下,B-1 紫苏叶花青素纯度由 0.748%提 高到 5.347%。9 个品种紫苏叶花青素得率和抗氧化能力均差异显著。PX-1 得率最高为 33.064 mg/100g;PX-1 和 B-1 抗氧化能力较强,其清除 DPPH 的 IC50 值分别为 6.055 和
5.983 mg/L,清除羟基自由基的 IC50 值分别为 2.273 和 2.173 mg/L,清除超氧阴离子 IC50
值为 9.780 和 31.132 mg/L。紫苏叶花青素含量与其抗氧化能力呈显著正相关。

Study on Extraction Technology and Bioactivities of Effective Components from Perilla Leaves
Abstract
Perilla frutescens, belonging to the Labiatae family, is an annual herbaceous plant and has a cultivation history of more than 2000 years in China, which is one of medicinal and edible plants promulgated firstly by the Chinese Ministry of Health. Recently, perilla with high economic value is increasingly concerned about the world due to the unique natural active ingredients in its leaves. In this research, the extraction technology and biological activities of rosmarinic acid extracts, essential oils and anthocyanins in leaves of different perilla varieties were studied, this can provide theoretical basis for the development and utilization of perilla. The results as follows:
Firstly, the rosmarinic acid extracts in leaves were obtained by ultrasound assisted solvent extraction method from ten perilla varieties and the antioxidant activities, antibacterial activities and cytotoxic activities were determinated furtherly. The results showed that there were significant differences in the extraction rates and the contents of rosmarinic acid in the rosmarinic acid extracts from leaves among ten varieties. The PX-1 had the highest extraction rate, up to 5.34%, and the ZY-10-1 had the highest content of rosmarinic acid in the rosmarinic acid extract, up to 18.7%.
