PAGE III PAGE 生姜的药理作用及养生功效 摘要 姜是食品、医药等工业的天然原料，含有100多种成分，主要可分为挥发油、姜辣素和二苯基庚烷3大类，此外还含有多种氨基酸、维生素和六氢姜黄素及铁、铜、锰、锌、铬、镍和锗等微量元素。姜的有效成分和功能研究较为广泛。目前姜油的提取工艺研究较成熟，在有效成分鉴定、挥发油和姜辣素组分分析、部分化合物结构鉴定等方面研究较少；姜中成分提取主要包括水汽蒸馏法、溶剂浸提法、压榨法、超声波法、超临界CO2萃取法；有效成分分析方法主要包括高效液相色谱、气相色谱、薄层层析和气质联用等方法。文章对生姜中有效成分、主要功效和以生姜为主要原料的产品开发进行回顾和总结，并对生姜的开发利用提出展望，本文主要研究生姜的药理作用及养生功效。 关键词：生姜；药理作用；养生功效；研究 Ginger is a natural raw material in food and medicine industry, containing more than 100 kinds of ingredients, can be divided into volatile oil, Jiang Lasu and two phenyl heptane 3 categories, in addition to containing a variety of trace elements, vitamins and amino acids of six hydrogen curcumin and iron copper, manganese, zinc, chromium, nickel and germanium, etc.. The effective components and functions of ginger are widely studied. The study on Extraction of ginger oil is more mature, and in the identification of effective components of the volatile oil and ginger oleoresin component analysis and structure identification of some compounds less; ginger extract components including water vapor distillation, solvent extraction, extraction method, ultrasonic extraction, supercritical CO2 extraction method; effective component analysis method including high performance liquid chromatography, gas chromatography, TLC and GC-MS method. In this paper, the effective components, main efficacy and development of ginger products are reviewed and summarized, and the prospect of ginger development and utilization is prospected. This paper mainly studies the pharmacological effects and health preservation effects of ginger.
